how to make roti | how to make soft chapati | phulka recipe with step by step photo and video recipe. roti or chapati is an integral part of every indian households. it is typically served for lunch and dinner, but there are so many other unique recipes with it. today with this post, i will try to showcase, how to make roti, chapati and phulka with a single wheat flour dough.

recently, i have been posting a lot of recipes with roti or chapati, especially the leftover roti recipes. for instance last week i had posted leftover roti ladoo and roti sandwich. i think these posts triggered a lot of recipe requests to post a video on how to make soft roti, phulka and even chapati. hence i thought of posting all the 3 variations with single wheat flour dough. well i have tried or attempted to showcase all the tips and tricks for all 3 variations, but i trust it may not be complete. every mother, wife or a cook would have some or other tips to make it even better. i believe cooking is an art and it can be fine-tuned by sharing the knowledge with one another. i am open to listen and update my technique. feel free to pass on your comment and suggestions to me and i will try to accommodate it in my cooking art.

furthermore, i would like to highlight some more tips, suggestions, and variations to make a perfect roti & chapati. firstly kneading is the key step for getting a soft and puffy indian flatbread recipe. do not over knead it and also do not press it hard with a lot of pressure. your kneading should be soft and gentle. secondly, i have not added any extra oil while mixing the dough. i know some prefer to add oil while mixing and preparing the dough. it should be equally fine to add if you prefer to have it. lastly, to get a puffy roti and phulka, do not rest the rolled round disc. i recommend to roll it and fry the disc immediately or simultaneously. also, do not overheat the frying pan as the disc may stick to the pan.

Well, not any more, as I’ve got an easy and flavorful Coconut Cookies recipe for you. These tasty Coconut Cookies are healthier too as they are made with whole wheat flour, jaggery, desiccated coconut and a few more ingredients.

This Coconut Cookies recipe is that fool proof way of preparing a batch of yummy vegan cookies that you can enjoy with your friends and family, just about any day of the year.

These literally get done within minutes, and the only time taking part is when the cookies are getting baked. So, a perfect sweet-snack for your festive occasions too.

Besides the main ingredients, whole wheat flour, desiccated coconut and jaggery, these Coconut Cookies are also aromatic and earthy because of the hints of cardamom and ginger in them. The cookies are slightly chewy from the outside, soft from within and sweet, but not overly.

A Coconut Cookies recipe that’s just about being oh-so-good! With these measurements, you can make about 12 Coconut Cookies. Double it to make more.

How to make Coconut Cookies

Make Cookie Dough

1. First, take 1 cup (120 grams) whole wheat flour and ¼ teaspoon baking soda in a mixing bowl.

2. With a spoon or spatula, mix very well. Also, preheat your oven to 180 degrees C/356 degrees F. The oven should be preheated 15 minutes before baking.

3. Add 4 tablespoons coconut oil. You can also add 3 tablespoons coconut oil.

4. Lightly mix the oil with the flour. Instead of coconut oil, you can also use 4 table spoons butter or ghee.

5. Then, add ¼ cup desiccated coconut, 1 tablespoon fine sooji/semolina (optional), ½ teaspoon cardamom powder and ¼ teaspoon dried ginger powder (optional).

6. Add ½ cup (85 grams) powdered or grated jaggery.

7. Mix everything well with your fingertips.

8. Add 2 to 3 table spoons water. Add the water in parts and start mixing with the dough. Depending on the quality of the flour and the jaggery, you may add less or more water.

The mixture should be able to come together and hold easily. I added 3 table spoons water. You can also use coconut milk instead of water.

9. Just mix together with your hands and gather to  a dough.

10. Don’t knead, lightly mix and form into a dough ball.

11. Grease a tray or pan well with 1 teaspoon coconut oil.

Shape and Bake Coconut Cookies

12. Pinch small to medium sized balls from the dough and place on the greased tray.

13. Press one cashew or almond on each cookie and slightly flatten them while pressing the cashews.

14. Don’t flatten too much. You can even skip the dry fruits and just flatten directly.

15. Bake the cookies in the preheated oven at 180 degrees C/356 degrees F for 20 to 25 minutes or till the tops become light golden. The cashews on the top will also become faintly golden.

Since oven temperatures vary, it may take less or more time. So, keep a check. For convection ovens, use the preheating and baking temperature of 170 degrees C/338 degrees F.

16. Once baked, after 2 to 3 minutes, remove them from the tray and keep on a wire rack for cooling. Use a flat spatula for removing the cookies from the tray.

You may see some jaggery melted and browned at the base of some cookies. Don’t worry. Just lift the cookies with a flat spatula.

17. When cooled to room temperature, store them in an air tight jar. Serve eggless Coconut Cookies during tea time.

Expert Tips

Desiccated coconut in this Coconut Cookies recipe can be replaced by fresh grated coconut. Roast/toast (don’t brown) to reduce moisture before using it in the recipe.

For the fats, you can use any other odorless and flavorless oil, butter or ghee (clarified butter) instead of coconut oil.

Instead of water, you can use coconut milk or any plant based milk in the cookie dough.

You can skip topping the cookies with cashews or even top with almonds or your choice of nuts.

To bake the cookies in a convection oven, preheat the oven at 170 degrees C/338 degrees F.

After baking, cool the cookies to room temperature and then store in an airtight container or jar.

It is a more concise or cut-down palak paneer recipe without the richness of paneer and other fancy ingredients. It can be an ideal side dish for many Indian flatbreads and flavoured rice recipes.

Palak Sabji Recipe | Dhaba Style Palak Sabzi Curry with step-by-step photo and video recipe. Spinach-based recipes are not new to Indian cuisine and are predominantly used in various Indian curries. Typically, it is prepared as gravy-based recipes, but the options are open-ended. One such straightforward veg curry is palak sabji, which is known for its simplicity and taste.

As I mentioned, this recipe is a cut-down or simplified version of the palak paneer. In my traditional palak paneer, I add paneer cubes and grated paneer and top it up with cooking cream. However, all those fancy dairy products are trimmed in this palak sabzi. This makes it light and healthy and easy and straightforward to prepare. In addition, the authentic and rustic taste of spinach leaves is preserved. In short, this recipe is for those who wish to taste the original flavours of spinach. Further, due to the thin gravy consistency, it tastes excellent when served with simple fried rice like jeera rice, ghee rice, etc. Moreover, if you wish to add fried paneer cubes, you are welcome to add them to this less fancy Palak Sabji.

Furthermore, some more additional and related tips, suggestions and variations to the palak sabji recipe. Firstly, many different types of spinach leaves are available in the market. I strongly recommend using English spinach leaves for an authentic and intense green colour. Secondly, the recipe does not take additional hero ingredients like paneer, mushrooms, potatoes, etc. But adding these would not harm but does not make authentic Palak Sabzi curry. Lastly, the same recipe can be prepared by finely chopping the spinach leaves and adding soaked moong dal. This makes it a dry version of spinach curry, but the gravy version is much liked.

Chill your loaf pan. I usually put mine in the freezer overnight so the ice cream firms up quicker. 

Make it vegan. Swap the heavy cream for a plant-based alternative. 

Swap the vodka. If you’re making this for kids and don’t want the vodka, swap it for ¼ teaspoon of xanthan gum. 

Check it often. I don’t usually have this problem when I add the vodka, but it’s good to check the ice cream every 30 minutes or so as it’s freezing and give it a quick mix so it doesn’t get ice crystals. 

Flavor variations

As mentioned earlier, this recipe is for a simple vanilla-flavored ice cream, but it’s SO easy to customize with other flavors. Here are a few to get you started:

Chocolate ice cream. Add 1/2 cup unsweetened cocoa powder. 

Chocolate chip ice cream. Fold in 1/2 cup sugar free chocolate chips.  

Mint ice cream. Add 1/2 teaspoon peppermint extract and chopped-up keto peppermint bark.

Strawberry ice cream. Fold in 1/4 cup sliced strawberries. 

Peanut butter & jelly ice cream. Fold in ¼ cup of peanut butter and ¼ of raspberries.

Perhaps posting it this late is mainly because I am not a huge fan of meal-maker or soya bean recipes. However, I was getting several requests for soya recipes and hence I am posting it on popular demand. My initial plan was to prepare the soya bean curry recipe with additional vegetables like peas and potatoes. But later I decided to keep it simple and prepare with basic tomato onion gravy with spices. The main reason is that it cannot be termed or does not follow the traditional Soya Chunks Curry. But it can take any vegetable to make it very interesting.

Furthermore, some more related and additional tips, suggestions and variations to Soya Chunks Curry Recipe. Firstly, in this recipe, I have used small or medium-sized soya nuggets which are ideal for curry. You do get big-sized but when used for small quantity curries, it just occupies a lot of space. Hence if it can be avoided, please do. Secondly, when the curry base is prepared with a combination of yoghurt and tomato-onion gravy base. It yields a creamy, tangy taste of curry. However, adding yoghurt is not mandatory and can be skipped if you do not wish to. Lastly, if you wish to add more vegetables with soybeans, you may. However, adding these means you need to reduce the soybean quantity.
